Looking for a refreshing drink to quench your thirst and brighten your day? This tropical punch is bursting with the flavors of mango and pineapple, and it's surprisingly easy to make! Plus, it's loaded with vitamin C and antioxidants, making it a healthy and delicious choice. 

This recipe is perfect for a summer party or a relaxing afternoon at home. It's also easily customizable -  want to make it a breakfast drink? Simply add a bit more chia seed pudding! 

Ready to whip up some sunshine in a glass? Let's get started!

Ingredients (Makes 4 servings):

  • 2 tablespoons chia seeds
  • 1 cup (240ml) mango pulp (fresh or store-bought)
  • 1 cup (240ml) pineapple juice

Instructions (Prep time: 10 minutes, plus chilling overnight):

Chia Seed Magic: In a separate bowl, whisk together 2 tablespoons of chia seeds with ½ cup (120ml) of hot water. Make sure the seeds are well dispersed. Cover the bowl and place it in the refrigerator for at least overnight, or until the chia seeds form a gel-like consistency. 

Tropical Fusion: Combine the mango pulp and pineapple juice in a saucepan. Heat the mixture over low heat until it's warm and fragrant. You don't need it boiling hot, just pleasantly warm.

Serve it Up!  Pour the warmed tropical juice into 4 glasses. Add a spoonful of the chilled chia seed pudding to each glass and stir gently to combine. Enjoy your refreshing and healthy punch immediately!

Tips:

Fresh or Frozen? You can use fresh or frozen mango pulp for this recipe. If using frozen, make sure it's thawed completely before adding it to the saucepan. 

Make it Extra Punchy: Want a stronger flavor? Feel free to adjust the amount of mango pulp or pineapple juice to your preference.

Breakfast on the Go:  Turn this drink into a filling breakfast by adding more chia seed pudding to each glass. You can even layer it with granola or yogurt for a complete and delicious meal.
