A Delicious Kiwi Cake

This recipe is for a light and fluffy cake bursting with the bright flavor of kiwi! It's easy to follow and perfect for any occasion. 

Here's what you'll need:

  • 3 kiwis (about 300 grams)
  • 4 eggs
  • 150 grams of sugar
  • 350 grams of flour
  • 200 milliliters of vegetable oil
  • 15 grams of baking powder

Let's Bake!

  1. Preheat your oven to 180 degrees Celsius (350 degrees Fahrenheit). This ensures the cake bakes evenly.
  2. Wash and peel your kiwis. Slice one kiwi for decoration (optional). Then, mash or puree the remaining kiwis until they become smooth. 
  3. In a large bowl, whisk together your eggs and sugar until they become light and fluffy. This adds air to the batter, making the cake rise nicely.
  4. In a separate bowl, mix your flour and baking powder. This creates the base of your cake and helps it rise.
  5. Slowly add the dry ingredients (flour and baking powder) to the wet ingredients (eggs and sugar) while gently mixing. Don't overmix, or your cake might be tough.
  6. Gently fold in the mashed kiwi and oil until everything is well combined.
  7. Pour the batter into a greased cake pan. A greased pan prevents the cake from sticking.
  8. If you chose to decorate with kiwi slices, arrange them prettily on top of the batter.
  9. Pop your cake in the preheated oven and bake for 1 hour, or until a toothpick inserted into the center comes out clean. This ensures your cake is baked all the way through.
  10. Let the cake cool completely before frosting or decorating.
