Bite-Sized Banana Pancakes

Ingredients:

  • 1 egg
  • 2 tablespoons sugar
  • ¾ cup milk
  • ¼ cup vegetable oil
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • Pinch of salt
  • 3 bananas

Instructions:

  1. In a large bowl, whisk together the egg, sugar, and salt. 
  2. Next, whisk in the milk and vegetable oil until well combined.
  3. Add the flour and baking powder to the wet ingredients and whisk until just combined. A few small lumps are okay.
  4. Slice the bananas into rounds. You can add them all to the batter at once, or keep some aside to add as you cook for easier dipping.
  5. Heat a lightly oiled pan over medium heat. 
  6. Pour or spoon a small amount of batter into the pan, then gently press a banana slice into the center. 
  7. Cook for 2-3 minutes per side, or until golden brown and cooked through. 
  8. Serve warm with your favorite toppings – maple syrup, fresh berries, whipped cream, or even chocolate chips!

Tips:

  • Use a measuring spoon or small cookie scoop to ensure your pancakes are all similar in size. 
  • Don't overcrowd the pan when cooking. Give the pancakes enough space to cook evenly. 
  • For a fun twist, try adding a few chocolate chips to the batter along with the banana slices.
