Here's a recipe for amazing gluten-free bread rolls made with chickpeas! They're fluffy, tasty, and packed with protein. Plus, a secret ingredient helps them hold together and even aids in weight management!
These rolls are so good, you won't believe they're only 1 Weight Watchers point each. They're perfect for a guilt-free treat the whole family will love.
Ingredients (for 5 rolls):
- 1 cup dried chickpeas
- 2 tablespoons psyllium husk powder
- 1 teaspoon baking soda (mixed with 1 tablespoon vinegar)
- 1/2 cup water
- Spices of your choice (try 1/2 teaspoon paprika and 1/2 teaspoon fennel seeds)
- 1 tablespoon olive oil
- Sesame seeds and nigella seeds for sprinkling
Instructions:
- Soak the chickpeas overnight in water. Rinse them well the next day.
- Put the chickpeas and all the other ingredients in a food processor.
- Blend with short bursts on high speed until you get a thick, creamy dough.
- Shape the dough into 5 small balls.
- Place the rolls on a baking sheet lined with parchment paper. Sprinkle with seeds if you like.
- Bake in a preheated oven at 350°F (180°C) for about 40 minutes, or until golden brown and puffed up.
