Chickpea Bread Rolls

Delicious and Healthy Chickpea Bread Rolls (Gluten-Free!)


Here's a recipe for amazing gluten-free bread rolls made with chickpeas! They're fluffy, tasty, and packed with protein. Plus, a secret ingredient helps them hold together and even aids in weight management! 

These rolls are so good, you won't believe they're only 1 Weight Watchers point each. They're perfect for a guilt-free treat the whole family will love. 

Ingredients (for 5 rolls):

  • 1 cup dried chickpeas
  • 2 tablespoons psyllium husk powder
  • 1 teaspoon baking soda (mixed with 1 tablespoon vinegar)
  • 1/2 cup water
  • Spices of your choice (try 1/2 teaspoon paprika and 1/2 teaspoon fennel seeds)
  • 1 tablespoon olive oil
  • Sesame seeds and nigella seeds for sprinkling

Instructions:

  1. Soak the chickpeas overnight in water. Rinse them well the next day.
  2. Put the chickpeas and all the other ingredients in a food processor.
  3. Blend with short bursts on high speed until you get a thick, creamy dough.
  4. Shape the dough into 5 small balls.
  5. Place the rolls on a baking sheet lined with parchment paper. Sprinkle with seeds if you like.
  6. Bake in a preheated oven at 350°F (180°C) for about 40 minutes, or until golden brown and puffed up.
  7. Enjoy these rolls warm with your favorite toppings! 

Tips:

  • These rolls stay soft for a few days in an airtight container.
  • You can make a big batch and freeze them for later. Just thaw and enjoy!
