Lemon Coconut Cashew Energy Balls

These tasty bites make about 10 balls and will leave you wanting more!

Here's what you'll need:

  • 1.5 cups (around 150 grams) of cashews
  • 1 cup (around 100 grams) of shredded coconut
  • The zest and juice of 1 large lemon (about 3 tablespoons of juice)
  • 2 tablespoons of maple syrup
  • 1 tablespoon of melted coconut oil

Let's make them!

  1. Grab your food processor and toss in all the ingredients: cashews, coconut, lemon zest, juice, maple syrup, and melted coconut oil. 
  2. Blend everything together until it's smooth and well combined. This might take a couple of minutes, so be patient! You want the cashews to be well broken down and the mixture to be nice and sticky. 
  3. With clean hands, scoop out the mixture and roll it into bite-sized balls. 
  4. If you want to add a little extra crunch, roll the balls in some more shredded coconut. 
  5. Pop your energy balls in the fridge for 30 minutes to firm up.
