Raffaello-Inspired Ice Cream
Beat the Heat with a Deliciously Healthy Raffaello-Inspired Ice Cream!
This recipe is perfect for those who crave a refreshing treat without compromising on taste or health. We've taken inspiration from the iconic Raffaello candy to create a delicious and creamy frozen dessert that's kind on your body.
Ingredients:
- 180g Greek yogurt (plain)
- 50g shredded coconut
- 100ml coconut milk (canned is fine!)
- 100g sugar-free white chocolate (chopped)
For the Topping:
- Extra melted sugar-free white chocolate
- Chopped roasted chestnuts (a small handful)
Instructions:
- In a blender, combine the Greek yogurt, shredded coconut, and coconut milk. Blend until smooth and creamy.
- In a separate bowl, melt the sugar-free white chocolate using a bain-marie (a heatproof bowl placed over simmering water). Alternatively, use short bursts in the microwave, stirring frequently, until melted and smooth.
- Gently fold the melted chocolate into the yogurt mixture until well combined.
- Pour the mixture into a freezer-safe container and freeze for at least 4-6 hours, or until completely solid.
- Once frozen, take the ice cream out a few minutes before serving to soften slightly. Scoop into bowls and drizzle with additional melted white chocolate.
- Finish it off with a sprinkle of chopped roasted chestnuts for an extra textural and nutty twist!
Tips:
- For an even richer coconut flavor, use toasted shredded coconut. Simply toast the coconut flakes in a dry pan over medium heat for a few minutes, stirring constantly, until golden brown.
- No sugar-free white chocolate? You can use regular white chocolate, but be mindful of the sugar content.
- Don't have chestnuts? Chopped almonds or hazelnuts would be a delicious alternative.
