Banana Chocolate Chip Muffins

Deliciously Moist Banana Chocolate Chip Muffins with a Streusel Surprise!  

These muffins are bursting with flavor - moist banana bread studded with melty chocolate chips, all topped with a delightful brown sugar streusel crumble. The best part? They're super simple to make! 

This recipe is also friendly for those with dietary restrictions. It's completely egg-free, and you can easily make it dairy-free by using non-dairy yogurt and vegan butter. 

Here's what you'll need:

For the Muffins:

  •     1 cup all-purpose flour
  •     1/2 cup light brown sugar
  •     3/4 teaspoon baking powder
  •     1/2 teaspoon baking soda
  •     1/4 teaspoon salt
  •     1/4 teaspoon cinnamon (optional)
  •     1/2 cup plain yogurt (dairy or non-dairy)
  •     1 ripe banana, mashed
  •     1/4 cup vegetable oil
  •     1/3 cup chocolate chips

For the Streusel Topping:

  •     1/3 cup butter (melted, regular or vegan)
  •     1 cup + 2 tablespoons all-purpose flour
  •     1/2 cup light brown sugar
  •     1/4 teaspoon salt

Let's get baking!

  1. Muffin Batter: In a large bowl, whisk together the yogurt, mashed banana, oil, and brown sugar until the sugar dissolves. 
  2. In a separate bowl, sift together the flour, baking powder, baking soda, salt, and cinnamon (if using).
  3. Gently fold the dry ingredients into the wet ingredients until just combined. Don't overmix! Finally, stir in those yummy chocolate chips.
  4. Streusel Topping: In a small bowl, combine the melted butter, brown sugar, flour, and salt. Mix with a fork or your fingertips until it becomes crumbly. Pop this streusel topping in the fridge to chill while you prepare your muffin tin.
  5. Bake Time! Preheat your oven to 370°F (190°C). Line a muffin tin with paper liners and fill each liner about 3/4 full with the batter. 
  6. Streusel Topping: Take out your chilled streusel and generously sprinkle it over the tops of the muffins.
  7. Bake for 15-17 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool slightly in the pan before transferring them to a wire rack to cool completely.
