Ingredients:

For the base:

  •     1/2 cup hemp seeds (shelled)
  •     1/2 cup pistachios
  •     12 large dates, pits removed
  •     1 cup almond flour
  •     1 cup oats
  •     1/2 cup almond butter

For the topping:

  •     1 cup dark chocolate (about 150g)
  •     2-3 tablespoons hemp seeds
  •     A few chopped pistachios

Instructions:

  1. Using a food processor, blend all the base ingredients until well combined. If the mixture seems dry, add a tablespoon or two of water to help it come together. Tip: If your dates are on the hard side, you'll definitely need that extra water.
  2. Spoon the mixture into a cupcake tin or cupcake liners and press it down to pack it in.
  3. While the base chills in the fridge, melt the chocolate in a microwave or over a double boiler.
  4. Once the chocolate is melted and smooth, pour it over the chilled base. Sprinkle some extra hemp seeds and chopped pistachios on top for an extra burst of flavor and texture.
  5. Pop those cups back in the fridge and let them set for a while. Once the chocolate is nice and firm, they're ready to enjoy!

Tips:

  • Don't like raw oats? No problem! Toast them in the oven for 10 minutes before adding them to the food processor. 
  • These treats will stay fresh in the fridge for about a week, stored in a sealed container.
