Homemade Chocolate Dipped Bars
These homemade bars are perfect for satisfying your sweet tooth without all the added sugar. Plus, they're fun and easy to make!
Ingredients:
- 1 cup of the thick cream from the top of a chilled can of coconut milk (don't shake the can!)
- 1 cup raw cashews, soaked for a few hours (or overnight)
- ½ cup of your favorite liquid sweetener (like rice malt syrup or maple syrup)
- 1 teaspoon vanilla extract
- ¼ cup cocoa powder
- ½ teaspoon sea salt
- 2 tablespoons of chopped nuts or chocolate chips
Chocolate Coating:
- 200g dark chocolate (chopped)
- 2 teaspoons coconut oil
- ⅓ cup chopped almonds (or other nuts/toppings of your choice)
Instructions:
- Blend it Up! Put the coconut cream, cashews, sweetener, vanilla, cocoa powder, and salt in a blender. Whiz it up on high speed until you have a smooth and creamy mixture. If you're adding nuts or chocolate chips, pulse the blender a few more times to combine them without crushing them too much.
- Freeze and Firm Up! Pour the creamy mixture into ice cream molds or small containers. Pop them in the freezer for at least 2-4 hours, or until they're completely solid.
- Chocolate Time! In a bowl, melt the chopped chocolate and coconut oil together. You can do this in the microwave (in short bursts, stirring in between) or over a pot of simmering water (indirect heat).
- Get Dipping! Now for the fun part! Take your frozen bars out of the freezer one at a time. Dip them completely in the melted chocolate, coating them evenly.
- Top it Off! While the chocolate is still wet, sprinkle on your chopped almonds or another topping of your choice.
- Freeze, then Enjoy! Place the dipped bars on a sheet of parchment paper and transfer them back to the freezer to set the chocolate coating. Give them about 15 minutes, then grab a spoon and dig in!
Tips:
- If you don't have ice cream molds, you can use small paper cups or even a loaf pan lined with parchment paper. Just cut the frozen mixture into bars before dipping.
- Get creative with your toppings! Try chopped dried fruit, crushed cookies, or even a drizzle of caramel sauce.
