Sweet Potato Tortillas

3-Ingredient Vegan and Gluten-Free Tortillas!

  • 2 cups mashed sweet potatoes (about 2 medium potatoes)
  • 1 2/3 cups to 2 cups cassava flour (depending on desired consistency)
  • 3 tablespoons coconut oil, plus extra for cooking

Let's get cooking!

  1. Sweet Potato Power: Boil your sweet potatoes until tender. You can cool them down quickly by placing them in a bowl of ice water. Peel the potatoes and mash them up well in a bowl.
  2. Dough Time: Add the coconut oil to the mashed sweet potatoes. Slowly stir in the cassava flour, a little at a time, until you have a well-combined dough. Feel free to get your hands dirty and knead it all together!
  3. Shaping Up: Now, it's time to form your tortillas! Divide the dough into 7 or 8 equal balls.

  5. Get Cooking!: Heat some coconut oil in a pan over medium-high heat. Carefully place your tortillas in the pan and cook for about 1 minute per side, or until golden brown and slightly firm.

  • Don't have cassava flour? No problem! You can substitute all-purpose flour if needed.
