Deliciously Easy Orange Coconut Cookies


These cookies are so simple to make, you'll be amazed at how delicious they are! The combination of orange and coconut is a real treat, and with just a few ingredients, you can whip up a batch in no time. 

Here's what you'll need:

  • 3/4 cup shredded coconut
  • 2 eggs
  • 4 tablespoons sugar
  • 1 teaspoon vanilla extract (or a splash of vanilla essence)
  • Zest of 1 orange and juice of 1/2 orange

Let's get baking!

  1. In a bowl, combine the coconut, sugar, orange zest, vanilla, and eggs. Mix it all together well.
  2. Slowly add the orange juice, a little bit at a time, until the mixture becomes sticky but not too runny. You want it to hold its shape when spooned out.
  3. Take a spoon and scoop out portions of the dough. Gently flatten them slightly and shape them into cookies on a baking sheet that's been lightly oiled.
  4. Pop those cookies in the oven at 170 degrees Celsius (325 degrees Fahrenheit) for 10-12 minutes.
  5. Take them out and let them cool completely. Now comes the best part - enjoy your delicious homemade orange coconut cookies!

Bonus Tip: These cookies can also be used as a base for making alfajores, a yummy South American dessert! Just sandwich two cookies together with dulce de leche (a kind of caramel spread) in the middle.
