Matcha Pistachio Balls

Energizing Matcha Pistachio Balls - A Delicious and Easy Treat!


These little balls are bursting with flavor and goodness! Packed with nuts, seeds, and a touch of matcha, they're a perfect pick-me-up snack that's easy to make and fun to customize.  

Here's what you'll need:

  • 1/2 cup pistachios (shelled)
  • 1/2 cup sunflower seeds
  • 1/2 cup shredded coconut
  • 10 dates, pitted (about 1 cup)
  • 2 teaspoons matcha powder
  • 2 tablespoons coconut oil (solid)
  • For the coating: 1/4 cup chopped pistachios 

Let's make them!

  1. Grab your food processor and toss in everything except the chopped pistachios. Blend it all up until it's nice and crumbly. Scrape down the sides halfway to make sure everything gets blended evenly. 
  2. The mixture should feel slightly sticky. If it's too dry, add a little more coconut oil. Now, scoop out about a tablespoon of the mixture and roll it between your hands to form a ball. Repeat this until all the mixture is used up.
  3. Time to get fancy! Pour the chopped pistachios onto a plate. Gently roll each ball in the chopped pistachios, pressing them on so they stick nicely. 
  4. That's it! Your delicious and healthy matcha pistachio balls are ready to enjoy. 

Tips for storage:

  • Keep these balls in an airtight container in the fridge for up to 5 days. They'll stay fresh for up to 3 months if you store them in the freezer.
  • In colder weather, these balls will be perfectly fine in an airtight container at room temperature or in your lunchbox for 1-2 days.
