This morning I woke up feeling hungry and was looking for a quick meal to satisfy it. Then I remembered there were some leftover rotis from yesterday night! Thinking why let them go to waste, I made this recipe using simple ingredients that are mostly available in every kitchen. It's a quick and delicious way to transform leftover rotis into a flavorful vegetable snack that's perfect for breakfast, lunch, or an evening snack.

Ingredients

  • 2 chapatis, cut into thin strips
  • 1 tbsp oil
  • 0.5 tsp mustard seeds
  • 0.5 tsp cumin seeds
  • 1 green chili, finely chopped
  • 1 small onion, chopped
  • 0.5 cup cabbage, shredded
  • 0.25 cup carrot, chopped
  • 0.25 cup capsicum, chopped
  • 1 small tomato, chopped
  • 0.5 tsp red chili powder
  • 0.25 tsp cumin powder
  • 0.25 tsp coriander powder
  • Salt, to taste

Method

  1. Heat oil in a pan. Add the mustard seeds and cumin seeds. Let them splutter.
  2. Add the green chili and sauté until fragrant.
  3. Add the chopped onion and cook until translucent.
  4. Add the carrot, cabbage, and capsicum (since these were available in my kitchen, I'm using them in this recipe, but you can add your favorite veggies of your choice). Stir-fry for 3–4 minutes.
  5. Add the chopped tomato and cook until soft.
  6. Add the salt, red chili powder, cumin powder, and coriander powder. Mix well.
  7. Add the chapati strips (I have used kitchen scissors to cut them easily) and toss gently until they are evenly coated with the masala.
  8. Cook for 2–3 minutes on medium heat and serve hot!
