Egg Omelette Curry
This is my favorite, super delicious egg omelette curry! Before discovering this recipe, I used to make curry with boiled eggs. Similar to that, I tried making it with an egg pouch / omelette instead of boiled eggs, and it turned out super delicious. I love eating this with chapati, but it's also so good with rice too! You should definitely try this—you will love it. It is a simple and delicious egg omelette simmered in a spicy onion-tomato gravy.

Ingredients
For the Omelette:
- 3 eggs
- 1 tbsp oil
For the Curry:
- 1 tbsp oil
- 0.5 tsp cumin seeds
- 1 small onion, finely chopped
- 1 small tomato, finely chopped
- 1 tsp ginger-garlic paste
- 0.5 tsp red chili powder
- 0.5 tsp coriander powder
- 0.5 tsp cumin powder
- 0.25 tsp turmeric powder
- 0.5 tsp garam masala
- Salt, to taste
- 1.5 cups water
Method
- Beat the eggs in a bowl until fluffy. Heat 1 tbsp oil in a skillet over medium heat and cook to make an omelette (or poached egg fold). Set aside.
- Heat 1 tbsp oil in another pan and add the cumin seeds. Let them sizzle until fragrant.
- Add the finely chopped onion and sauté until golden brown.
- Add the ginger-garlic paste and cook for 1 minute until the raw smell disappears.
- Add the tomato, red chili powder, coriander powder, cumin powder, turmeric powder, garam masala, and salt. Cook until the tomatoes break down and turn soft.
- Pour in the water and bring the gravy to a rolling boil.
- Place the whole omelette into the curry (or cut into large pieces if preferred) and simmer on low heat for 5–7 minutes so it absorbs all the flavors.
- Serve hot with steamed rice, chapati, or roti!

- Flavor Absorption: Simmering the omelette in the simmering gravy lets it soak up the masaledar flavors, making it juicy and soft.
- Omelette Variations: Feel free to add chopped green chilies, onions, or coriander into the beaten eggs before frying the omelette for an extra kick!
- Gravy Thickness: Adjust the water quantity depending on whether you want a thick curry for chapatis or a liquid gravy for rice.
