Ridge Gourd Chutney

This is one of my favorite recipes! I love to eat this as a side dish with curd rice, and I also love mixing it with hot ghee rice—it gives an awesome taste! You can enjoy this chutney with idli, dosa, or chapati as well. Trust me, you will definitely love this! This flavorful and healthy chutney is made with ridge gourd, tomatoes, and roasted spices.

Ingredients

  • 1 medium ridge gourd, peeled and chopped
  • 2 tbsp oil
  • 2 tbsp chana dal
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • 1 sprig curry leaves
  • 2 medium tomatoes, chopped into large pieces
  • A small piece of tamarind
  • 2.5 green chilies (2–3)
  • Salt, to taste
  • Water, as needed

For Tempering:

  • 1 tsp oil
  • 2 dried red chilies
  • 1 sprig curry leaves
  • 0.5 tsp cumin seeds
  • 0.5 tsp mustard seeds

Method

  1. Heat 1 tbsp oil in a pan. Add the ridge gourd and a little salt. Stir well, cover, and cook for a few minutes. Remove the lid, stir until the ridge gourd is soft, then transfer it to a plate and let it cool.
  2. In the same pan, heat the remaining 1 tbsp oil. Add the chana dal and roast for about 3 minutes until golden.
  3. Add the curry leaves, cumin seeds, and coriander seeds. Sauté for a few minutes until fragrant.
  4. Add the tomatoes and cook until they become soft.
  5. Add the tamarind and cook for another 2–3 minutes. Turn off the heat and let the mixture cool completely.
  6. In a blender, add the cooked ridge gourd, the roasted chana dal and tomato mixture, green chilies, and salt. Blend until smooth.
  7. Add a little water as needed and blend again to reach your desired consistency.
  8. For the tempering, heat 1 tsp oil in a small pan. Add the dried red chilies, curry leaves, cumin seeds, and mustard seeds. Let them splutter.
  9. Pour the tempering over the chutney, mix well, and serve hot with rice, idli, dosa, or chapati!

  • Ghee Rice Pairing: Mix a generous spoonful of this chutney with steaming hot rice and a dollop of ghee for an incredible taste experience!
  • Cool Before Blending: Always let the roasted lentils and ridge gourd cool completely before blending to preserve the vibrant taste and prevent steam pressure build-up.
  • Tamarind Balance: Adjust the small piece of tamarind based on how tart your tomatoes are for a perfectly balanced tangy-spicy flavor.
