These Southwest Potato Stacks are a flavor explosion waiting to happen! They were one of my favorite dishes, and for good reason. Imagine layers of crispy, taco-seasoned potatoes with a gooey cheese center, all drizzled with a smoky chipotle sauce. Trust me, it's addictive!

Here's how to make this easy and delicious recipe:

You'll need:

  • 3-4 large potatoes
  • Knife or mandoline (a special tool for thinly slicing)
  • 1 tablespoon melted garlic butter
  • 2 tablespoons mild taco seasoning
  • Cooking spray
  • 1 teaspoon shredded pepper jack cheese (per serving)
  • Chipotle ranch dressing
  • Chopped chives

Instructions:

  1. Slice it thin: Using a knife or mandoline, thinly slice your potatoes. The thinner they are, the crispier they'll get!
  2. Spice things up: In a large bowl, toss your potato slices with the melted garlic butter and taco seasoning. Make sure they're evenly coated!
  3. Prepare your pan: Give your cupcake pan a quick spray with cooking spray to prevent sticking.
  4. Cheese layer: Sprinkle a teaspoon of shredded pepper jack cheese into each cupcake well.
  5. Build your stacks: Now for the fun part! Carefully layer the seasoned potato slices in each well, filling them all the way to the top. Don't be shy, pack them in there!
  6. Cheesy goodness: Once your stacks are built, top them off with even more shredded cheese. We want that melty goodness!
  7. Bake to crispy perfection: Pop your pan in the oven at 400°F (200°C) for 35-45 minutes, or until the potatoes are golden brown and crispy.
