BOUNTY Panna Cotta

  • 1 (13.5 oz) can full-fat coconut milk** (or heavy cream for a lighter version, use half water and half cream)

Here's how to whip it up:

  1. Get it creamy:  In a saucepan, combine the coconut milk, sweetener, and gelatin powder. Heat it over medium heat, stirring constantly, until the gelatin dissolves completely.
  2. Cool it down: Take the pan off the heat and let the mixture cool for a few minutes.
  3. Pour and set:  Pour the mixture into a single mold or individual serving dishes. Refrigerate for at least 6 hours, or ideally overnight, until it's nice and firm.
  4. Chocolate Cover:  Now for the delicious topping! In a small bowl, whisk together 3 teaspoons of unsweetened cocoa powder with a little bit of hot water (around 2 tablespoons) until you get a smooth sauce. Adjust the sweetness to your taste, and drizzle it over the chilled panna cotta.
