Coconut Stuffed Semolina Fritters (Kakara Pitha)
A traditional Indian sweet made with a soft semolina dough and a delicious coconut-jaggery filling. Perfect for festivals and special occasions, these have been a staple in our home for every celebration. They’re one of my absolute favorite desserts from childhood, and to this day, I never get tired of them! In our family, we call these Kakara or Kakara Pitha.

Ingredients
For the Dough:
- 1 cup suji (semolina/rava)
- 1 cup water
- 0.25 cup sugar (or grated jaggery)
- 1 tsp ghee
- 0.5 tsp cardamom powder
- A pinch of salt
For the Filling:
- 1 cup fresh grated coconut
- 0.5 cup grated jaggery (or sugar)
- 1 tsp ghee
- 0.5 tsp cardamom powder
For Frying:
- Oil, for deep frying
Method
- Prepare the Filling: Heat 1 tsp ghee in a pan over low-medium heat. Add the fresh grated coconut and sauté for 2–3 minutes until fragrant. Add the grated jaggery (or sugar) and stir continuously until it melts and combines with the coconut. Stir in the cardamom powder and cook until the mixture thickens and pulls away from the pan. Remove from heat and let it cool completely.
- Prepare the Dough: In a saucepan, bring the water, sugar (or jaggery), ghee, and salt to a gentle boil. Once the sugar dissolves completely, lower the heat and gradually add the suji while stirring continuously to prevent any lumps from forming. Stir in the cardamom powder and cook until the mixture absorbs the water, thickens, and forms a dough-like ball. Turn off the heat, cover, and let it cool until it is warm enough to comfortably handle.
- Shape & Fry: Grease your hands with a little ghee. Knead the dough slightly so it becomes smooth. Take a small portion of dough, roll it into a ball, and flatten it into a disc. Place a spoonful of the coconut filling in the center. Bring the edges together, seal completely so no filling leaks out, and gently flatten into a smooth round or oval patty.
- Deep Fry: Heat oil in a deep pan over medium heat. Fry the patties in batches until they turn golden brown and crisp on both sides. Remove and drain on paper towels. Serve warm and enjoy!
💡 Tips & Tricks
- Leftover Filling Hack: If you have leftover filling, you can easily roll it into small coconut laddus!
- Lump-Free Dough: Lower the heat and add suji gradually while continuously whisking to ensure a completely smooth dough.
- Perfect Seal: Ensure the edges are pinched and completely sealed so the jaggery-coconut filling does not leak out while frying.
- Knead Warm: Knead the semolina dough while it is still warm to get a smooth, crack-free texture when shaping.
