Besan Chutney

Besan chutney is one of my absolute favorites to pair with poori and chapati—it's delicious, healthy, and flavorful! Whenever we make pooris or chapatis at home, there MUST be besan chutney. I even love having it with idlis, even when there are other chutneys and sambar on the table! You should definitely try this recipe, you will love it. It is healthy, quick to make, and packed with flavor.

Ingredients

  • 2 tbsp oil
  • 0.5 tsp cumin seeds
  • 1 sprig curry leaves
  • 2.5 green chilies (2–3), chopped
  • 1 medium onion, finely chopped
  • 1 small carrot, grated
  • 2 tbsp besan (gram flour)
  • 1.5 cups water
  • Salt, to taste
  • 2 tbsp chopped coriander leaves

Method

  1. Mix the 2 tbsp besan with ½ cup of water in a small bowl until smooth and completely lump-free.
  2. Heat the oil in a pan over medium heat and add the cumin seeds until they sizzle.
  3. Add the curry leaves, green chilies, onions, and grated carrot. Sauté for 3–4 minutes until the vegetables soften.
  4. Pour in the remaining 1 cup of water and bring it to a rolling boil.
  5. Slowly pour in the prepared besan slurry while whisking/stirring continuously to prevent lumps from forming.
  6. Add salt and cook on low-medium heat for 5–7 minutes, stirring often, until the chutney thickens and the raw besan smell completely disappears.
  7. Stir in the fresh chopped coriander leaves and switch off the heat.
  8. Serve hot with dosa, idli, poori, chapati, or upma!

💡 Tips & Tricks

  • Lump-Free Slurry: Whisk the besan thoroughly with cool water before adding it to hot boiling water to guarantee a smooth, velvety consistency.
  • Continuous Stirring: Once you add the besan mixture to the boiling water, keep stirring constantly as gram flour thickens very rapidly.
  • Flavor Boost: You can add a pinch of turmeric powder or lemon juice at the end for an extra vibrant color and tangy taste.
