Cheesy Scallion Pancakes

Recipe Overview

This recipe makes about four delicious scallion pancakes. The dough, crafted from flour, water, salt, and a hint of baking soda, comes together quickly. After a brief kneading session, it rests, allowing the gluten to relax, making it easier to roll out. A sprinkling of flour and cornstarch keeps the dough from sticking during the rolling process. Chopped scallions and cheese are tucked inside before the pancakes are pan-fried to a golden-brown perfection.

Ingredients:

  • 95 ml of water
  • 1.5g of salt
  • 150g of flour
  • An additional 1/4 cup of flour
  • 1/4 cup of corn starch
  • Fresh green onions
  • A pinch of baking soda
  • Cheese of your choice
  • 20g of salted butter
  • Oil for frying

Method:

First, mix 95 ml of water with 1.5g of salt until the salt dissolves completely. Then, add 150g of flour to the salted water, stirring vigorously to combine. Once mixed, knead the dough with your hands until it becomes smooth and elastic. Cover the dough and let it rest for 10 minutes.

After resting, divide the dough into four equal pieces. Shape each piece into a rough ball, then cover them again and let them rest for another 5-10 minutes. While the dough is resting, wash and finely chop the fresh green onions. Sprinkle a pinch of baking soda over the chopped onions and mix well.

In a separate bowl, combine 1/4 cup of flour and 1/4 cup of corn starch. Take one piece of dough, flatten it with your hands, and then use a rolling pin to roll it out into a thin sheet. Sprinkle the flour and cornstarch mixture evenly over the dough. Repeat this process with the remaining dough pieces.

Carefully peel the dough pieces apart. Next, microwave 20g of salted butter for about 15 seconds until melted. Brush the melted butter over each piece of dough. Generously sprinkle the chopped green onions and cheese on top of the buttered dough.

Fold the dough using your preferred method. Heat oil in a frying pan over medium heat. Fry each pancake for about 2 minutes on each side or until they are golden brown and crispy.

And there you have it—crispy, cheesy, green onion pancakes. Enjoy!

Tips:

Feel free to tweak the cheese and scallion quantities to suit your taste buds. If the dough gets too clingy, sprinkle in extra flour, but only a tablespoon at a time. Beware of overworking the dough; too much handling will make it tough. Experiment with different cheeses or mix a few varieties for a unique flavor burst.
